Among the perfumes, colors and flavors from all over the world, the Cous Cous Fest is one of the most interesting gastronomic events of the summer of San Vito Lo Capo, the Cous Cous Fest.
In a fantastic multi-ethnic atmosphere you can taste the many local and international variations of the Cous Cous at the Case del Cous Cous, taste the interpretations of great chefs at cooking shows, as well as the dishes of the chefs of the ten nations competing in the Couscous championships.
The Cous Cous is now inextricably linked to San Vito Lo Capo, it is no longer a simple recipe but a wonderful binder between different cultures and religions, between the desire to party and the desire for a better world!
It is a very common dish in North Africa,
It can be made with meat and vegetables, but here we prepare it with fish.
The couscous requires a really long preparation, it is cooked with love and a lot of patience!
In a terracotta dish the semolina is combined with water (here we say "incocciare") to form larger granules of semolina, and then add oil, salt, garlic, finely chopped onion, parsley and some spices, like pepper and cinnamon, but also almonds to give this wonderful food a rich and particular taste.
Thus begins the slow steaming process at very low heat which gives the semolina an unmistakable aroma.
International chefs, cooking challenges, great guests and a more cultural and in-depth program. This will be the face of the 23rd edition of the Cous Cous Fest, the international festival of cultural integration, scheduled from 17 to 26 September in San Vito Lo Capo.
